Ingredients:

Bowmore 12 Single Malt Whiskey

Honey Syrup
Instructions:
Shake everything except the ginger beer and strain into an ice cube filled Collins glass. Top with the ginger beer. Garnish with a dehydrated lime wheel and mint sprig. Serve with a straw
Honey Syrup: Combine 1 cup of honey and 1/2 cup of water in pan. Heat and stir until incorporated. Cool and refrigerate
Clarified Acid Adjusted Granny Smith Apple Juice: You'll need:
- A blender
- Strainer
- Circular container (preferably with a pour spout)
- Pectinex Ultra SP-L
- ascorbic acid
- malic acid
- citric acid
- scale
- granny smith apples
Wash and cut the apples into cubes. Add a spoonful of ascorbic acid to the blender. Add the apples and blend until pureed. Strain the puree until you're left with the juice. Put this juice in the circular container. Add the Pectinex. You'll need 2ml per 1000ml. It doesn't have to be precise, if it's a little over or under it will still work. Cover the container and refrigerate overnight. In the morning all the solid parts will have accumulated at the bottom and you can pour off the clarified juice from the top
For the acid adjusting you're going to need 6.4g of Citric acid and 1.5g of malic acid per 200ml of clarified juice. Add the juice and acid to a container, shake, refrigerate
