"For an Instagram Cocktail Competition for this month, we were tasked with revisiting a drink that we thought we could make better. My choice was part of a short lived series I was attempting. The challenge was to make something earthy with gin, and the first go around saw all the earthiness drowned out by an overpowering ginger ale and a much too lightly flavored mushroom tea. This time, I decided to make a strong mushroom and curry syrup to really hone in on the earthiness, with rosemary lending the assist, and ditch the bubbles altogether to turn this into a perfectly proportioned sour. I stuck with gin and Cynar but replaced aquavit with the herbal and smokey Bozal Mezcal. They all lend some balancing botanicals and the mushroom, curry, rosemary, agave and artichoke all bring different layers of earth and smoke. Ingredients: - Tanqueray TEN - Bozal Mezcal Instructions: Slap rosemary and add to shaker tin with all other ingredients. Shake well and double-strain into a curry rimmed coupe glass.
