Not content to keep it simple, I opted to combine 3 classic serves into one delicious and refreshing cocktail. Heavy on the fruit flavors, this Paloma/Margarita/Jungle Bird mashup features a delicious split base of blanco tequila and dark rum, equal parts Campari and Cointreau, and freshly juiced pineapple and lime finished with a really flavorful brand of grapefruit soda. Refreshing blanco tequila combines with the aged rum and fruity sweetness tied together with the acidity of the lime and the bitter edge of Campari. Demerara syrup adds a touch of balance based on how sweet your pineapple and soda are (I used 1/4 oz as the soda is quite sweet) It’s a complex mashup, but all the elements stand up strong and make a damn good connection.
