"Sidecars have been in my head since last month’s intense riff on the cocktail and I wanted to make something closer to the original spec but still a little out there. I knew the time was RIPE for a strawberry infusion and decided to go with a full measure of infused gin. And of course I didn’t want to wait so I whipped out my iSi Gourmet Whipper and rapid-infused some Tanqueray TEN with fresh strawberries and got to work. I went with Liber and Co’s Blood Orange Cordial for color and also to bring in a bit more orange flavor. This came out wonderfully balanced, a good interpretation Chelsea Sidecar with a great pop of strawberry color and flavor with the texture of the egg white holding it all together. Cheers!",
