Ingredients: - London Dry Gin - Fresh Grapefruit Juice Instructions: 1. Shake gin, grapefruit, guava purée and thyme syrup with ice until well chilled 2. Strain into glass filled with fresh, pebble ice 3. Garnish with expressed thyme sprig and grapefruit peel Thyme syrup 1 cup boiling water 1 cup sugar 10-12 thyme sprigs In a heatproof container stir together hot water and sugar, add in the thyme (while hot) and let infuse for at least an hour but preferably in the fridge overnight.
