"Durian, The King of Fruits, will be making an appearance in all of my cocktails this week! The spiky and smelly fruit has lingered on the edges of my mind until one day my good friend randomly showed up with one in his hands! Wow! Excited is an understatement! After reading about how to tell if it’s ripe, I smelled the bottom and got an intense but not overpowering aroma. Throughout the cutting process I smelled it more and more, sometimes faint, sometimes crazy intense, but finally had a bowl full of kinda gross yellow fruit to work with. My friends and I all tried a taste, with apple and pear being thrown around but the texture more like a nasty mushy banana… ahem, I mean very creamy. I didn’t get any garlic flavor per se but definitely a little savory/umami. Undeterred by the texture, I tried juicing some pods but literally they held no juice! At this point I figured it wasn’t quite ripe, which is sad, but I still gave an infusion and syrup a shot. The infusion here came out perfect honestly and was the benchmark for starting this series. This was crazy tasty, bitter quinine and juniper melding with a savory but fruity funk and mint aroma. Also, on the name: durian and alcohol are said to create a deadly combination by some southeast Asian tales, though that seems to have been debunked. Ingredients: - Durian Infused Brokers Gin - St George Spiced Pear Liqueur Instructions: Add all ingredients besides tonic to a shaker tin with ice and short shake.
