"My entry to a Mezcal Day Competition! “I am bitter” in French meets “But The Mezcal Warms You” in Spanish in the name of this (relatively) simple to make but delicious cocktail. Blending together two very different products from very different parts of the world, it is a match made in my kitchen when a warm Joven Espadin Mezcal meets Billaget’s China-China Amer. These two boast strong flavors but are well suited paired with lime and turbinado syrup. A strong dose of Angostora bitters brings in some warm spice notes while the small seasoning of Licor 43 sweetens the profile just enough to smooth it out while elevating the vanilla notes in the mezcal. The rim helps bridge the divide: nutmeg mingling with the amer and smoked salt complimenting the mezcal.
