"Although there’s many a form of mojito out there in the world, I wonder whether every possible combo of fruit + mint has been attempted. Let’s try not to do the math, because I’m sure it’s excruciating. Regardless, here’s one of those combinations attempting to combine peach and passion fruit together with a touch of mint to create something that could definitely, totally, be a mojito! As it turns out, according to some food scientist out there, peach and passion fruit are a pretty good combo. I’ve got to agree! I will say however, that the passion fruit puree that I used in this recipe was a lot more sour than I anticipated it to be, which combined with the lime juice was quite the puckering experience. Perhaps it would’ve been more on the sweeter side if I had created the puree myself, however that’s going to have to wait until the fruits are in season (which they were not when I bought the bag of frozen passion fruit that I used many a time ago).
