In order to make the syrup, remove the skin from one whole pineapple and slice. Then melt one stick of salted butter ( we prefer @kerrygoldirl .) Place all the pineapple in a bowl with the butter and coat evenly. We sometimes let it soak in the butter for 30 minutes. Then go to your grill outside and give all the pieces a nice charring. You can use your oven broil setting if you don't have a grill. Then cut the grilled pineapple into smaller pieces and place in a pot. Add 4 cups of water, 2 cups of sugar, and 1tsp of citric acid. After water comes to boil, turn the temp down and simmer till the sugar is dissolved. Turn off heat and take a potato masher and mash of the pineapple a bit to release more of the pineapple juices. Place the pot in the fridge overnight. In the morning the butter will be solidified on top. Just take a spoon and remove. Place in a Tupperware to use for fat washing or perhaps for cooking up something yummy. Then strain out all the pineapple and charred prices through a fine strainer. Enjoy.
