"To be completely honest, I normally don’t like gin. But upon my first taste of Junipero, I felt like I could make something with this incredible product to introduce other people to how approachable a gin cocktail can be. By pairing the Junipero with a delightful from-scratch raspberry syrup and lemon juice with a top of Prosecco, I truly believe I’ve created a gin cocktail that can turn any non-gin drinker into a gin and a Junipero lover. As a bartender, I always want my cocktails to be like a great dish, honoring beautiful ingredients and letting them shine without adding too many bells and whistles. I was workshopping this drink with some of my staff, and we were in a stalemate on what to name it when a Mean Girls theme occurred to us.
