Last year, when my friends' dog Winston got neutered, I had just made a batch of strawberry-infused white rum, so I decided to make a drink in his honour. I recently made another batch, as well as a bangin' red syrup. With April's contest in mind, it was a perfect time to revisit it. A sweet fruit explosion backed up by Campari's bitter orange peel and Peychaud's creole spice. A funky yet subdued rum blend provides the backbone. Blend for 5 seconds. Open pour into a tall glass or tiki mug. Top with more ice if necessary. Garnish with a lime wheel, mint sprig and strawberry.
