"While trying to use up some wine that was left at my house, I decided to have a look at another classic cocktail that you don’t hear many people mixing up anymore.
This time, it’s the Bishop cocktail. I’ve seen several different “original” recipes, but the one I went with comes from “The Old Waldorf-Astoria Bar Book” by A.S. Crockett in the 1935 reprint. That recipe looks like this:
3 oz rum
1 oz red wine (Cabernet Sauvignon)
1 tsp simple syrup
1/2 tablespoon fresh lime juice
That is tasty, but not as balanced as I would want. Here’s what my drink-tinkering brought me.

Ingredients:
- Red Wine
- Shadow Ridge 1893 Navy Strength Rum
Instructions:
Place all ingredients in a shaker with ice and gently shake until cold. Strain into a chilled red wine glass and enjoy.
*for the wine, I used Cabernet Sauvignon, but I think there is a lot of room for experimenting there. Pinot noir or Bordeaux could be fun. Beaujolais, Malbec. I think any of those could work.
