"My partner decided to make a Honey Lemon Chamomile Cake she saw and thought it would be fun for me to make a cocktail to go with it. She was correct, so she sent me the recipe, and from the name alone I knew we had a winner on our hands. I chose Empress gin as the spirit for the gorgeous colour and flavour, and the rest of the basic ingredients were obvious. With a couple of test runs throughout the week, I upped the lemon and syrup, and replaced normal honey syrup with the infused version to complement the particular chamomile we used. A dash of orange bitters was the final touch to make it all work. The cocktail is extremely fresh and light on the palate, so it paired really nicely while eating dessert. The same tea being used in both really helped bring the flavours together, while keeping them light in the drink and letting the cake be the star of the show. If you do recreate it, I recommend spicing your honey syrup according to the other flavours in your chamomile. Mix it up and have fun!
