I was thrilled that US Citrus kindly sent me some lime leaves right after I returned from my Thailand trip so that I could get right into making cocktails inspired by all the incredible food I ate there. This gimlet riff is one of my favorite recipes I’ve ever made; the lime leaf and spicy mango married beautifully with the spicy botanicals in this San Miguel gin.

Ingredients:
- San Miguel Southwestern Gin
- Lime-leaf Simple Syrup
Instructions:
Acid-adjust mango juice to lime strength; this will vary by brand used. I did 40 mg citric acid and 25 mg malic acid for 250 mL of juice). Chop of one quarter of a strong chili pepper and infuse in the lime-mango juice for at least 2 hours. After shaking up a batch of the cocktail (you'll want more than one), let it sit in the fridge overnight so all the flavors mingle.
