Spicy Mango Margarita

The pairing of the sweet mango and the spicy jalapeño is so perfect. (Spicy, but not too spicy.) This is a fantastic drink for a warm summer day.
Ingredients:
- Espolòn Blanco Tequila
- Cointreau
Instructions:
Rim a rocks glass with Tajin (or Kosher Salt). Combine all ingredients in a shaker with ice and shake until cold. Pour into a rocks glass with fresh ice. Alternatively, add ingredients to a blender with frozen mango chunks and blend until smooth. Garnish with a lime wheel and jalapeño slices.
For the simple syrup:
1 cup granulated sugar 1 cup water 2 to 3 medium jalapeño peppers, sliced ¼-inch (0.6 cm) thick
Combine sugar, water, and jalapeños in a small saucepan. Warm over medium-low heat for 5 minutes until the sugar is dissolved and the jalapeños are bright green. Strain out jalapeños with a fine-mesh sieve into a container and discard the jalapeños. Store in the refrigerator for up to a month. You can adjust the heat by changing how many peppers you add.
