Ingredients: - Raspberry Ginger Syrup - Lemon Juice Instructions: First, make your syrup. Simmer equal parts sugar and water until the sugar dissolves. Add 1/2 cup raspberries and a few slices of peeled, fresh ginger, then bring to a boil. As soon as it’s boiling, remove it from the heat. Leave to cool for several hours, tasting frequently until the raspberry and ginger flavor is to your liking. Bottle and keep in the fridge until you’re ready to use. Pour your syrup and lemon juice into a mixing glass. Add thyme and a bit of lemon peel and muddle it in. Fine strain this into your weirdest wine glass over a large cube or ice sphere. Top it off with the lemon raspberry soda and tonic and add the bitters. Stir to chill and garnish with a couple thyme sprigs and a lemon peel.
