This Daiquiri riff was inspired by a Thai Curry dish I recently had. I love curry and knew the flavours would go great with the bottle of Compagnie des Indes Tricorne Rum I have. A blast of funky rum, curry and a bit of heat at first, mellowed out by the coconut liqueur
Ingredients:
- Compagnie Des Indes Tricorne Rum
- Kalani Coconut Liqueur
Instructions:
Combine everything in a shaker tin and shake with ice. Strain into a chilled coupe glass. Garnish with the Lime Leaf.
Note* Compagnie des Indes Tricorne Rum is a blend of Unaged Jamaican rum, Unaged Agricole Rum, lightly aged Trinidadian rum and Batavia arrack, bottled at 43%. It's not crazy in your face rum but it does have a bit of funk to it. If you can't replicate that blend the simplest substitution for this would be 1.5oz of a lightly aged rum and a 0.5oz of an Overproof Unaged Jamaican Rum but feel free to play around with the blend
Thai Curry Syrup
- 3/4tbsp Ground Coriander
- 1tsp Cumin
- 1/2tsp ground turmeric
- 1/3tsp ground ginger
- 1/3tsp Red Chili Flakes
- 1/4tsp ground white pepper
- 1/8tsp salt
- 2 Whole Cloves
- 1 Bay Leaf
- 1 Small Dried Thai Red Chili (broken up, including seeds) adjust for your own tastes
- 1 Cup Sugar
- 1/2 Cup Water
Combine all the spice ingredients in a bowl and mix till incorporated. Bring the water to a boil in a pot. Remove from heat, add the sugar and spice mix and whisk until the sugar is dissolved. Cover and let steep for two hours. Strain the syrup and refrigerate
