"Momotarō (桃太郎, "Peach Boy") is a popular hero of Japanese folklore. Long ago in Japan, a poor, elderly couple discover a large peach and, in it, the child they have always desired. They name him Momotaro--Peach Boy. This story was the inspiration for my peach fizz variation and a perfect drink to highlight Bitter Truth Peach Bitters. When Bitter Truth sent me their travel sets, the peach bitters seemed perfect for a light spring drink. These bitters, much like this cocktail, are a fresh spin on classic flavors. Bitters added to the purée and the cocktail help double down on the candied peach flavor that works really well with the aged rum. This peach and cream fizz has everything you want in a spring time treat. Enjoy Ingredients: - Appleton Estate Rum - Aperol Instructions: *Drain the syrup from a can of peaches and set aside. Add the peaches to a pan and set over high heat to sear the peaches. After the peaches are seared, add the reserved heavy syrup and one can of peaches in juice to the pan and simmer for 10 min. Blend the mixture and return to the heat and simmer for an additional 10 min. Pass through a fine mesh, then add 10 - 15 dashes of peach bitters and stir to combine. Bottle and store in the fridge. Add a Collins Glass to the freezer to chill. In a shaker tin, combine everything but the Club Soda, with a single cube of ice and shake vigorously for 3 min. This will develop the foam structure and chill the drink. Remove the ice and dry shake for another minute and work air into the cocktail. Fill the glass 1/4 of the way with cold club soda then pour in the cocktail. Wait 1-2 min for the foam to stabilize then slowly pour the remaining club soda into the middle of the foam.
