"Clarin is a spirit that’s been on my list to try for a long time. You might assume that for a first cocktail with it I would keep it simple to really capture the essence of the flavor but you’d be wrong. I took a tiny sip and knew that this high proof funky juice deserved to live in a complex castle of taste because it would cut through it all anyway. I also realized it would fit perfectly with my latest expiriment: banana pepper shrub! Taking the vinigery juice from a quality jar of banana peppers and muddling some of the fruit with it, I added 3:1 ratio of simple syrup and voila! A spicy, complex shrub that hits right around the same place as the burn of the Clarin Sajous! Velevet Falernum, banana liqueur, and Suze come in with the other kind of spicy, sweet banana and bitter gentian respectively with bright fresh lime juice as the citric base; they all sit underneath the main players but add their own delightful touches. More peppery heat from the Hellfire Shrub combined with cinnamon and clove bitterness from a heavy float of Angostura finishes this complex sipper: the result is a tropical concoction with a bittersweet and spicy kick with warming spice notes and a strong banana pepper and clarin midpallete.
