I made a bunch of peach syrup and acid adjusted orange juice for another cocktail and wanted to come up with something else so I wasn't stuck drinking the same thing. I quite enjoyed the Peachtree Punch 2.0 in Smugglers Cove so I did a riff on that. This is a very bright and refreshing cocktail. Perfect for summer! A bit on the sweeter side for my tastes but with the right Rum and Pisco it balances out nicely
Ingredients
- 1.5 oz Lightly Aged Rum
- 0.5 oz Pisco
- 0.25 oz Clement Mahina Coco Liqueur
- 0.75 oz Peach Syrup
- 1 oz Acid Adjusted Orange Juice
- 1 ea Pinch Of Nutmeg

Shake everything with ice and strain into a chilled coupe glass. Garnish with a peach slice *Acid Adjusted Orange Juice - 200ml Fresh Orange Juice, Strained - 6.4g Citric Acid - 2g Malic Acid Stirred together *Peach Syrup - 1 Cup of Sugar - 0.5 Cups of Water - 1 Peach, finely chopped Bring the water to a boil, remove from heat and add the sugar and peach. Whisk until incorporated. Cover and let steep for 3 days. Strain and refrigerate
