"It’s been a little while since I created my own recipe and I had this nagging thought as I went to the drawing board. “No, that won’t work, that’s not creative enough, why would you want so much damn orange.” Maybe an adorable Pixar film doesn’t quite suit this margarita (?) riff but the idea of telling your doubts to STFU certainly does and thats what I did with this cocktail. Making use of my new Breville Smoke Gun I used the hickory wood chips to infuse the glass with smoke while I prepped the rest of the ingredients. This drink is complex, with the split base of the smokey but delicious El Silencio Mezcal, the bittersweet berries and chocolate notes of the infused Rammazzoti Amaro and the spicy orange of Pierre Ferrand’s Curaçao; from there, everything’s an accent to those principal flavors. Blood Orange Cordial amplified by the Curaçao brings intense orange flavor to anchor the drink while the Bittermen’s Xocolatl Mole bitters exentuate the chocolate notes of the amaro. The hickory smoke elevates the smokey profile of the mezcal while Jerry Thomas Decanter bitters hit the berry notes of the Ramazzoti and the spice notes of the Curaçao. Altogether, what seems like an overwhelming flavor blast balances over a large cube after just a moment, and when the last of the smoke leaves the glass you’re left with a drink that’s more than the sum of it’s parts.", "undefined", "Silencio Bruno",

Ingredients: - El Silencio Mezcal - Cocao-Nib Infused Ramazzoti Amaro Instructions: Smoke a rocks glass with hickory wood chips. Add all ingredients to a shaker tin with ice. Shake well and double strain over a large clear cube into the smoked rocks glass. Garnish with a blood orange wedge and grated nutmeg. *Infusion: Add 25g of cacao nibs and 250ml of Ramazzoti to an iSi Gourmet Whipper. Charge with 1 N2O charger, shake 5 times, and charge with a 2nd charger. Let sit 15 minutes, shaking every 30 seconds or so, and vent gas.
