"Was in Quogue this past weekend. “Make us a fun cocktail” was the request. Without my tools and bottles, I surveyed the kitchen and the pantry and whipped up a Peach and Bourbon cocktail. Had to refine it once I was home :)
In a shaker, muddle one whole peach, cut into small pieces, in 1/2 oz Simple Syrup and 1/8 oz Lime Juice. Set in fridge for two hours (if you have time) and then add:
2 oz Carefree Bourbon
1 oz White peach Liqueur

Shake over ice and then strain and pour over a large ice cube. Garnish with candied peach (or a slice of peach if you remember to set aside. Ooops.).
