For this #starwarsday celebration I wanted to create a cocktail that you would see at any of the drinking establishments in the Star Wars Universe.
So after a little digging, I landed on the casino at Canto Bight as my inspiration. So I learned more about this high end rollers club on Cantonica.
Cantonica is home to the largest artificial sea in the galaxy. Due to his man made nature, it emits a deep purple hue as the sun sets over its horizon.

Ingredients:
- Tiki Lovers White Rum
- Blue Curaçao
Instructions:
Couple days before you will need to fat wash the Tiki Lovers Rum with coconut oil. Make the air first. To make the air add 1tsp of lecithin powder to 150ml of Tart Cherry Juice. Use an immersion blender to create bubbles. Add the rest of the ingredients into a mixing glass with cubed ice. Stir for 45-60 seconds. Strain into a chilled Nick & Nora glass. Top with Tart Cherry Air.
