"Twisted Vesper | Crafted Pour"

"We are big fans of aged Gin. It's something that's not utilized as much as it should be in the bar community. It changes Gin from a bright floral/citrus spirit to a much more mellow liquor that, in certain cases, is much more suitable to being sipped neat or on the rocks. This particular Gin from Dented Brick is finished in ex-chardonnay barrels which brings a little bit of that okay/buttery feel to the table and mellows out the juniper. To kick things off, we wanted to see how this unique Gin behaves in a classic cocktail... The Vesper. Unlike James Bond, we stir ours. (He's so extra) The only other change we made was that we added a grapefruit twist on top of the additional lemon twist that accompanies this drink. This version of The Vesper tasted NOTHING like the drink we were used to. It was more along the lines of a Martinez Cocktail. In a world of endless ingredients and combinations thereof, we sometimes forget that just a simple change, aged Gin instead of regular, can make an entirely new cocktail.
