Sage Sour

This is a sage-flavoured whisky sour. This savoury syrup is so easy to make if you have fresh sage growing in your garden. I found that the volume of lemon that you would typicaly use in a sour was overwhelming the sage flavour, so I reduced the lemon, which gave it a sweeter finish.
Ingredients:
- Maker's Mark Bourbon
- Honey-sage Syrup
Instructions:
To make the syrup, combine 1 cup water, 1/2 cup honey, and 10-12 fresh sage leaves in a saucepan. Bring to a slow boil, reduce heat, and simmer for about 2 minutes. Let leaves steep until cool, then strain out leaves.
Combine bourbon, honey-sage syrup, lemon juice, and egg whites in a shaker. Dry shake with no ice. Add a large ice cube and shake until cold. Double strain into a coupe glass.
