"Leveling up in the craft cocktail experience is always a fun and interesting pleasure, and this subversive drink is no exception. I spent my Saturday on my more labor intensive to-do list: carving ice, force carbonation, fancy garnishing. At the end of the day though, I wanted to take a special and impressive picture of something that’s been on my mind since I first picked up Cocktail Codex: the Stirred Daiquiri. For many of you, this is not a new concept and I’m sure you’ve executed it before. For me, this is a whole new experience, my first time clarifying just the juice for cocktails, and I had to make this my magnum opus of the day even though it’s the simplest cocktail I made. Ah, what silky perfection. I don’t generally make my Daiquiri with overproof rum, but after all my planning I failed to plan for the perfect stirred sour: no regular white rum! Alas, I added in some sweet elderflower liqueur to mellow the drink out and ended up with one of the tastiest variations of the drink I’ve ever had. Ingredients: - Wray And Nephew White Rum - St Elder Elderflower Liqueur Instructions: Add all ingredients to a mixing glass with ice and stir until chilled, about 20 seconds. Strain into a coupe glass. No garnish. *To clarify the lime juice, measure 25% weight of water to juice and add .2% of combined weight of agar agar to the water. Cook over medium heat until agar dissolves, then add juice to the mixture. Add to container and let set in ice bath for 10 minutes. Meanwhile, line colender with cheese cloth and set over bowl. Break up chunks of agar in juice and strain through the cheese cloth. Strain into a clean container through a coffee filter and refrigerate until ready to use. Best within 1 day.
