Watermelon Oleo Recipe:

•300g watermelon rind, liberally de-fleshed, chopped into ~1” pieces
•300g sugar

Add watermelon rind to a large bowl and cover with sugar. Stir to combine. Cover and let rest for up to 24 hours, stirring regularly, until all sugar has dissolved. Strain and bottle.
