"Equiano Light Rum is masterfully blended between distilleries in Mauritius and Barbados. I chose to focus on the people of Barbados, starting with the name of the island: many of the residents of Barbados are descended from the Igbo, an ethnic group from Nigeria, who colliquially refer to the island as “Bim” or “Bimshire”, and so the Bimshire Daiquiri was created celebrate their home. Not only is Equiano made in Barbados but so is JDT’s Velvet Falernum while the other flavors are from popular fruits on the island, particularly banana and mango, which is added via a delicious shrub. In Bajan cuisine, one of the more popular condiments is the Bajan Pepper sauce, made traditionally with scotch bonnet peppers, mustard and vinegar. I wanted to match these flavors as best as I could without overpowering (or overdeveloping) the cocktail so I opted to add a dose of Habenero Hellfire Shrub to bring in some heat along with Twang’s spicy mango Safari Spice salt. Grapefruit brings in the main citrus flavor, assited by lime, because it was allegedly discovered in Barbados by Reverend Griffith Hughes, who described it as “the Forbidden fruit.” Together I hope this drink and photo transports you to the tropics where you could enjoy some good Bajan cuisine and learn more about the home and history of its incredible people. Cheers! Ingredients: - Equiano Light Rum - Giffard Banane Du Bresil Instructions: Add all ingredients to a shaker tin with ice and shake well. Double strain into a salted coupe glass. * Mango Shrub: 300 g fresh mango, 300g sugar, 50g white vinegar. Add to blender and blend on high until smooth.
