"This cocktail is the product of a few warm days and a serious hankering for summertime. I knew I wanted to use cucumber in a cocktail and started tossing around flavor pairings and everything in this drink just seemed to fit together in my head. I trialed the cucumber juice, honey and set of bitters the other night in a bitters and tonic so knew that would be perfect, and smashing my two creations together with my favorite japelpeño gin from Revivalist and Giffard’s amazing peach liqueur brings out a perfectly spicy and refreshing balance of sweet, vegetal and fruit notes with the sage and bitters balancing it out. Ingredients: - Blackberry And Sage Infused Plymouth Gin - Revivalist Dragon Dance Gin Instructions: Add all ingredients to a shaker tin with ice and shake well. Double strain into a highball glass over a clear ice spear. Garnish with cucumber ribbons and a lime wheel. *To infuse the gin, take equal weight blackberries and gin and about a dozen sage leaves and add to iSi Gourmet Whipper. Charge with N20, shake, and charge again. Shake every 30 seconds for 10 minutes, then vent. Open container and allow all bubbles to pop.
