Daiquiri’s Downfall

This was a cocktail I created for a daiquiri competition.
I wanted to stick with an old daiquiri style of using granulated sugar but twist it with some tiki flavors inspired by a very popular tiki classic, the missionsary’s downfall.
In the end, due to a scheduling mixup, I didn’t end up submitting this version to the judges, though I wish I had.
Ingredients:
- Lightly Aged Rum
- Pineapple Rum
Instructions:
Combine the salt, bitters, lime, and honey in a shaking tin. Using a milk frother whisk until the honey has dissolved. Add the rum along with one large cube and two small cubes. Shake for 12-15 seconds. Double strain into a Nick & Nora glass. Garnish with a few drops of mint oil.
