"A belated share of 2023’s Easter exotic elixir. I wanted to incorporate carrot juice, and there’s a great gin-based drink from @dillonsdistills called the Peter Rabbit Punch which includes carrot, lemon, and pineapple juices. I started there for my inspiration. I wanted to complement the carrot from two directions. I used a trio of island rums as the base (hence the name), including an agricole for more vegetal notes, and the Demerara syrup to bring out the earthy sweetness found in carrots (and sweet potatoes). The end result is a fresh and delightful tropical libation full of spring flavour. Flash blend, then open pour into a Hurricane glass. Garnish with a mint sprig and two pineapple fronds—optionally, put the fronds at the front of the glass (bunny ears) and the mint sprig at the back (bushy tail).
