"Essentially a spicy Paloma/Mojito mashup (clever name, right?) this complex highball has it all: pepper infused agave, tons of citrus, tumeric with a kick, vegetal undertones, and fresh, herbacious mint. Together, this is a hard to balance but easy to enjoy sipper, made all the better by my beautiful highball glasses from Reidel. The tequila is infused with red, black and green peppercorns and chipotle peppers from a prebatched infusion kit, which isn’t normally my style but damn it worked out really well here. The peppery goodness meets the vegetal notes of the agave, amplified by excellent celery bitters from Bitter Truth, mingling with the spicy tumeric and meeting right on the border of balance with the citrusy flavors and mint. Lengthened by the soda water, this is a terrific cocktail, spicy without being overwhelming and helping to scratch an itch I didn’t realize I had for spicy agave drinks in the middle of winter.", "undefined", "Palomojito",

Ingredients: - Pepper Infused 1800 Blanco Tequila - Mexcalia Espadin Mezcal Instructions: Add mint and syrup to a shaker tin and muddle gently. Add remaining ingredients with ice and shake well. Double strain over a clear ice spear in a highball glass. Top with soda water. Garnish with a grapefruit slices and a mint bouquet.
