"Brazilian Mojito | Crafted Pour"

"It’s clear ice week and I’ve been working to improve my carving game. This is my best ice spear to date, the perfect size for the glass and pretty darn clear, though I notice my spears in clearer drinks are more visible, especially in bright lighting: tips? Anyway, this simple mojito riff comes from a place of shame: I haven’t had white rum on my barcart in MONTHS. We all get caught up in certain things (like mezcal and amari) and, suddenly, you want a mojito and don’t have the key ingredient. However, Leblon Cachaça to the rescue, and in a big way: this was better than a standard mojito. I considered going a full 2 oz with Wray and Nephew but I saw my new favorite Brazilian spirit and said hmm this will do just fine. With the slightly funky overproof rum and (gasp!) plain old simple syrup, this drink shined brighter than my stupid softbox! It was perfectly delicious and a testament to a tenant of cocktails I struggle to accept: simple is beautiful. Not that complexity can’t be, but the clean crispness of this modified classic was exactly what I wanted and needed. Add remaining ingredients except soda water and shake well with ice. Double strain over a clear ice spear. Top with soda water. Garnish with a Mint Bouquet.
