Kiwi cocktails are nothing that I’ve been looking at very extensively and I wanted to play around with it without going the soda route so a syrup is right up my alley! I did a version with just kiwi syrup and one with added a rosemary sprig in the syrup to get some more herbal tones. The rosemary can be quite subtle with the lime juice so play around with the ratios to find your preference. Ingredients: - Hendricks Gin - Havana Club Añejo 3 Años Instructions: The syrup is a 1:1 ratio sugar and water and I heated up the sugar and water like a regular simple syrup till the sugar was dissolved. Peel and cut up a few kiwis in larger chunks and add them in the syrup and let it simmer for a while. I let it simmer for 30-45 minutes, strain and pour into a bottle and let it cool down. Add some rosemary sprigs and put in a fridge for a couple of days. Add all ingredients in a shaker with ice and shake to chill. Strain and pour into a glass of choice, preferably with a large ice cube or some crushed ice.
