We made our own Mole bitters last month and can't stop using them. Usually, lots of Whiskey is consumed in the Winter, but this year we are really feeling the dark Rum drinks. If you've never had a Rum Old Fashioned or Manhattan, you're missing out.

Stir all ingredients over ice and strain into your favorite glass. Express an orange peel over the drink and toss. Pour bourbon foam over the top of the drink. ******* Rich Vanilla Simple: 2 cups of turbinado sugar to 1 cup of water, 1/4 tsp salt, and 1 vanilla bean scraped out. ******* Bourbon Foam: Take 3 parts egg whites and 1 part Bourbon. Whip into a foam using a whipper, ISI, or other tool.
