I wanted a very autumnal drink today, went to make one of my usual Fall go-tos, and realized I was out of Applejack. I upped the rum, subbed an apple cider syrup for the simple, and I dare say I prefer this to my original!

To make the syrup, pour 2 cups apple cider into a small saucepan. Add a cinnamon stick, 2 whole cloves, and 2 all spice berries. Heat the cider to a rolling boil, then reduce to a simmer. Simmer until it’s reduced down to about 3/4 of a cup. Strain the cider syrup into a jar or bottle for later use. It should keep in your fridge for about a week. To make the cocktail, stir all ingredients with ice. Strain into a rocks glass over fresh ice. Garnish with an apple wedge. Cheers!
Editor's Note
Barrel-finished rum anchors this autumnal riff, trading traditional applejack for a deeper, oak-driven profile. House-made cider syrup provides a bright, spiced finish.
