Daiquiri’s Downfall

This was a cocktail I created for a daiquiri competition. I wanted to stick with an old daiquiri style of using granulated sugar but twist it with some tiki flavors inspired by a very popular tiki classic, the missionsary’s downfall. In the end, due to a scheduling mixup, I didn’t end up submitting this version to the judges, though I wish I had.
Ingredients
- .75 ozLightly Aged Rum
- .75 ozPineapple Rum
- .5 ozUnaged Agricole Rum
- 1.5 tspGranulated Honey
- .75 ozLime Juice
- 2 dash(es)The Bitter Truth Peach Bitters
- 5 drop(s)Saline Solution

Combine the saline solution, bitters, lime, and honey in a shaking tin. Using a milk frother whisk until the honey has dissolved. Add the rum along with one large cube and two small cubes. Shake for 12-15 seconds. Double strain into a Nick & Nora glass. Garnish with a few drops of mint oil.

A split-base rum blend meets honey and saline in this tropical-leaning Daiquiri riff. Peach bitters add a subtle stone-fruit layer that bridges the gap between grassy Agricole and pineapple notes.
