We haven't done a whole lot when it comes to using bananas in cocktails. A lot of banana drinks we've had in the past, always seem to be too sweet, and we aren't a big fan of sweet drinks. Starting with a Mojito base, we then added a banana peel oleo. We decided to use the peel instead of the fruit inside, to mitigate the sweetness. The result was FANTASTIC! This was the best mojito we've had in a long time. Mint 🌱 Syrup Fill up a large mason jar with mint leaves. Top off with cold simple ...

Combine all ingredients (except dark rum float) in your shaker. Add ice, shake, and strain over fresh ice in your glass of choice. Add the dark rum floater, garnish, and enjoy!
Editor's Note
Banana peel oleo adds aromatic depth to this Mojito riff without the cloying sweetness of fruit-based syrups. A dark rum float provides a necessary, punchy finish.

This is such a clever way to use banana peels! Do you have a preferred ratio for the water addition to the oleo to keep the consistency balanced?
