Pineapple Absinthe Sour

Another fun cocktail this week! Definitely a Whiskey Sour… maybe an Absinthe Sour. But for sure inspired by a Sazerac. Adding pineapple juice brings some additional sweetness and just pairs so well with all the other flavors. Combining three different but slightly similar iconic cocktails is kind of hard. One thing that did make it easier is having this bottle of Barrel-Aged Absinthe from Absinthia. It keeps those barrel-aged notes strong while getting those iconic herbal notes from the Absint...
Ingredients
- 1 ozRye Whiskey
- 1 ozAbsinthia Absinthe Barrel Aged
- .5 ozLemon Juice
- .5 ozPineapple Juice
- .25 ozSimple Syrup
- 1 eaEgg White
- 2 dash(es)Peychaud's Bitters

Add all ingredients except for the bitters to a cocktail shaker (although adding a couple of dashes in there wouldn’t hurt). Dry shake all ingredients without ice, then add ice and shake again. Double strain into a coupe and garnish with 3 drops of Peychaud’s Bitters.
