We are big fans of aged Gin. It's something that's not utilized as much as it should be in the bar community. It changes Gin from a bright floral/citrus spirit to a much more mellow liquor that, in certain cases, is much more suitable to being sipped neat or on the rocks. This particular Gin from Dented Brick is finished in ex-chardonnay barrels which brings a little bit of that okay/buttery feel to the table and mellows out the juniper.
