I had tried Pasubio for the first time and wanted to try and make a cocktail with it, and after playing around for a little while, this is what came of it. It's a herbaceous martini with alpine berries and herbs, rosemary, and pine.

1.5 oz
Junipero Gin Smoked Rosemary

1 oz
Pasubio Vino Amaro

.5 oz
Dolin Dry Vermouth

.25 oz
Honey Syrup

Lemon Twist Express(Discard), Rosemary Sprig

Add all ingredients to a mixing glass, add ice and stir, single strain into a Nick and Nora. Lemon twist express and discard, finish with a rosemary sprig.

Pasubio amaro brings alpine notes of pine and wild berry to this stirred gin drink. Smoked rosemary and honey syrup create a complex, herbaceous sipper that evolves with each taste.
