Grapefruit Peel

A strip of grapefruit peel expressed over the drink and dropped in or rested on the rim. The peel's essential oils carry pink/ruby/yellow grapefruit aromatic — bright citrus with the distinctive bitter-pith edge — that defines Palomas, Hemingway Daiquiris, Brown Derbies, and grapefruit-vodka highballs. Distinct from lemon and orange peel garnishes by the bitter-pith aromatic and grapefruit-specific zest oils. Cut as a wide swath, twisted to express oils, then rubbed on the rim before dropping.
