I wanted to use the Canadian whiskey I got from Stalk and Barrel to make a Banana Fosters inspired drink, and it came out really well! I used banana oleo syrup which is lighter than what most people are used to using, so there's a heavy pour of it, but it goes so well with the malt and vanilla in the whiskey. A dash of cinnamon-forward bitters brings the whole thing together.

I have a PhD in chemistry, which is basically just mixology you're not supposed to drink, so the shift from lab to bar was pretty obvious.

Editor's Note
Banana oleo replaces standard liqueur, lending a natural, aromatic sweetness to this dessert-inspired riff. A caramelized banana garnish ties the profile together.

This sounds like a fantastic way to highlight the notes in the whisky! Do you happen to have the recipe for your banana oleo syrup so others can try making it at home?

This sounds delicious. What are the specs on the oleo? I would love to recreate this one.
