Kiwi Tart

Felt like making a Kiwi cocktail. I actually had to head to the market as I don’t usually have kiwi in the house. Big effort actually leaving the house to make a cocktail. But I was determined, and determination trumped laziness, and off I went. In the end, well worth it - this was a beauty. Lots of lime juice provided the tart, and lots of gin provided the fun.

In a shaker, muddle 2 kiwi slices and 4-6 mint leaves with 1 oz lime juice. Add 3 oz gin and 1 oz kiwi puree. Shake with ice and strain into a rocks glass over fresh ice. Garnish with kiwi and mint.
