Inspired by golden hour and Beach Boys ballads, this sparkling riff of the Old Cuban uses Tahitian vanilla rum and dry curaçao for a warm, citrusy depth, topped with crisp cava. Sip slowly. ☀️🌿🍾 This was so, so, so much of what I needed after a day of working in the yard. Light, refreshing, and oh-so-minty. The vanilla rum was the perfect pairing with the mint, lime, and the cava was the icing on the cake!

Muddle mint and syrup. Add remaining ingredients (except cava). Shake, double strain, and top with cava. Garnish.
