As a Jew, most people don’t think I care about Christmas. Nothing could be further from the truth. My Jewish mother loved Christmas and took us to see Santa every year. I grew up with a Christian stepmother who was the QUEEN of Christmas and taught me how to make eggnog, Christmas cookies, and a proper Christmas dinner (I am no cook, but I appreciated the lessons). Add 6-8 mint leaves, rum, and lime juice to mixing glass. Muddle to release mint oils. Strain mixture into blender. Add cream of coconut, coconut milk, and ice to blender - I added 1/2 cup of medium sized cubes. Blend until all ice is broken down. Pour cocktail into rocks glass. Garnish with cranberries and mint. Happy Holidays!
