Bee's Knees

Submitted on: March 18, 2021
A classic Prohibition-era cocktail, the Bee's Knees is named in the vernacular of the era with a phrase meaning basically "awesome." (If there was an Urban Dictionary in the 1920s, they would confirm.) It's a variation of the classic Gin Sour, using honey instead of sugar, shown here with a garnish of dried Meyer Lemon. The recipe is attributed to Frank Meier, a bartender at the Hôtel Ritz Paris.

Editor's Note
Honey syrup replaces simple sugar in this classic sour, adding a floral depth that highlights the gin's botanicals. A quintessential Prohibition-era refresher.

This is such a timeless classic! The Bee's Knees is always a crowd-pleaser. Do you have a preferred ratio for your honey syrup to get that perfect consistency?
