Cinnamon Bellini Martini

Submitted on: July 30, 2025
A drink I created for specials over the weekend. We got in a delicious white peach purée, and I immediately knew I wanted to do a Bellini riff. Our sous chef made a cinnamon syrup for a dessert special and gave me the leftovers. For the Bellini syrup, I combined the thawed peach purée with the cinnamon syrup and some peach schnapps. Honestly, this cocktail was so good!! Cheers y’all!!

Hi there! I've been a bartender at the same restaurant for over 10 years. My favorite spirits to work with are rum (love a good tiki drink!), gin and amaros. I love to garden and I often use the herbs and produce I grow to make syrups and infusions. Cheers y'all! ...

Editor's Note
Peach purée and house-made cinnamon syrup transform the classic Bellini into a shaken, martini-style sipper. A Prosecco float adds a crisp, effervescent finish.
