This twist on a Tom Collins incorporates limoncello and rosemary syrup to brighten things up a bit. In honor of National Smile Day, I brightened things up even more with a smiling lemon wedge garnish.

Garnish with lemon wedge smile and rosemary sprig. *For syrup, boil a 1:1 ratio of sugar to water and add 3-5 rosemary sprigs. Allow to cool for 60 minutes or until desired taste. Strain.
Editor's Note
Vodka and limoncello build a bright, citrus-forward base. A homemade rosemary syrup adds an aromatic, herbal counterpoint, turning this Collins into a sophisticated sparkling lemonade.

This sounds so tasty. What brand of Limoncello do you recommend on this one? and do you think I could use gin in this as well?

This sounds like such a bright and refreshing twist on a classic! The rosemary syrup sounds like a perfect pairing with the limoncello. Thanks for sharing!
