I decided to take a sober September. With that in mind, I still wanted to make some quality craft NoLow tiki cocktails. I first turned my attention to recreating the mai tai. While this isn’t exactly a mai tai, it’s def close and definitely delicious.

Caleño Dark And Spicy Non-alcoholic Rum

.25 oz
Rich Demerara Gum Syrup

Combine all ingredients into a shaking tin with 8 oz pebble ice. Whip shake for 5 seconds. Add 4 oz pebble ice to a chilled Old Fashioned glass (12 oz). Open pour contents of shaking tin into glassware. Garnish with mint sprig and lime wheel.

A thoughtful non-alcoholic riff on the Mai Tai that uses pebble ice and a whip shake to achieve authentic tiki texture. The saline and aromatic bitters provide the necessary structural depth.
